Pineapple arranged rum
The recipe of the moment! You need a victoria pineapple (variety from Reunion Island and Mauritius), if possible organic and fresh (there is, as for mangoes, a dedicated freight).
Go on a white rum (cart) from the same island. And yes, in small arrangements, we favour short circuits! There is a factory in Bois-Rouge and another in Gol (french overseas department).
So, to come to the recipe:
- Peel the pineapple and cut it into large pieces, taking care to extract the heart
- Eat the heart and put the rest of the pineapple in your container
- Add the rum and six tablespoons of canadou
- Close and let macerate for three months.
Pineapple rum is part of the range of arranged rums "fruits of the sun" next to banana arranged rum and mango arranged rum to name but a few. Its nose is straightforward, the palate is lively and acidic. To reduce the latter, you can add sugar during maceration (after two months). The other solution is to add a vanilla bean, it is up to you to choose according to your preferences. It is preferable to choose a very sweet and ripe pineapple. Enjoy your pineapple arranged rum!
